River Valley Ranch Goat’s Milk Feta Pancakes with Citrus Syrup

Yield 4 servings
Ingredients:
1 cup goats milk feta cheese
1 t. baking powder
3 eggs
2 T. melted butter
2 t. sugar
½ cup flour, sifted
Combine ingredients and whisk until smooth. Butter a grill on medium heat and pour out 2 inch pancake. Cook until golden brown on both sides. Serve with Citrus Syrup.
Citrus Syrup
Yield 1 serving
Ingredients:
1 cup water
¼ cup sugar
¼ cup brown sugar
1 t. ginger, chopped
1 t. orange zest
1 t. lime zest
1 t. lemon zest

Combine ingredients and boil. Turn heat off and steep for 20 minutes. Strain and serve warm.
